Moutabal with quick flat bread

Moutabal and hummus are great as a healthy snack or even light dinner when served with a salad. While hummus is really quick as you do not need to cook anything, moutabal requires the aubergines to be roasted for about half an hour depending on the aubergine size. When making flat bread, you can really play with the ingredients. By adding extra herbs for example, you create aromatic breads with amazing colours!



  • 3  medium-sized aubergines
  • 1-2 tbsp of tahini paste (2 tbsp of lightly roasted sesame seeds mixed with some olive oil in a food processor)
  • 1-2 cloves garlic
  • salt and pepper
  • cumin
  • olive oil
  • lemon juice

Pita bread

  • 1 cup of buckwheat flour
  • 1 cup of rye flour/ or any other gluten-free flour
  • 2 tsp of dry yeast
  • 1-1,5 cup of warm water
  • olive oil
  • salt and pepper
  • fresh or dry herbs


  1. First, halve the aubergines and put them into roasting tray, sprinkle with olive oil and season with sea salt and pepper. Roast for about 30 minutes in a preheated oven (220°C) until the inside (not the skin) is very soft.
  2. In the meantime, roast sesame seeds in a pan until golden. No need to use any oil. Entire process only takes about 2-3 minutes. Leave the seeds cool down and blend in a food processor together with some olive oil into a paste. The amount of olive oil depends on what consistency you prefer. I do not want it to be too runny, therefore I use just a bit of oil.
  3. Cooked aubergines need to cool down for a couple of minutes. Then just separate the inside of the aubergine from the skin. If the aubergine is cooked well, this step is very easy. We do not want to use the skins as they are too hard.
  4. You can either blend all the ingredients in a food processor or, if you prefer more heterogenous structure, just blend all the ingredients except for the aubergine and then add chopped aubergine to the mix. Do not blend any more, just mix with a spoon. Store in a fridge before serving.
  5. To make quick flat bread, just mix all the ingredients, dry first, then add wet ones. Let it rest for several minutes. I do 10-30 mins, sometimes more.
  6. Form a non-sticky dough on a board and divide into smaller parts, depending on how big you want your breads to be. Then just roll out each piece into cca 0,5 cm thick bread and grill from both sides using a pan. These ingredients make at least 4-5 breads.
