Nourishing oil-free leek & potato soup

Since I find dairy in the soup heavy, I try to come up with recipes that do not require using it. I really enjoy making different soups, especially because they usually can be made very healthy without using any oil or dairy, yet this does not negatively affect the taste. So I created this amazing nourishing and creamy soup with just a couple of common ingredients that can be found literally everywhere! It is ready in just minutes and can easily replace the main course as it is extremely filling!

Ingredients:

  • 2 – 3 leeks
  • 1 stalk of celery
  • 4 medium potatoes
  • 2 medium onions
  • 2 cloves of garlic
  • water or vegetable stock
  • thyme
  • marjoram
  • salt
  • pepper
  • lemon juice
  1. Chop the leeks, onions, garlic, and celery and place it in a pot. Add water, just so that most of the vegetables is covered, but not all of it.
  2. Add some thyme and pepper and cook for a couple of minutes. Everything should be cooked in about 10 minutes, then just blend it until it is nice and creamy.
  3. In the meantime, chop the potatoes into 1 cm cubes and add them to the blended soup. Season with salt, marjoram, and more pepper if you wish. Continue cooking the potatoes until they are soft.
  4. Finally, just squeeze some lemon juice into the soup and serve.
