This winter root vegetable salad is so incredibly easy and quick! It makes a simple yet delicious weekday side as it is tossed up in under ten minutes. Also, although the salad is simple and healthy, it has quite a different taste to regular leafy salads – it is very juicy and sweet.
Simply shred carrots, root parsley or parsnip, beetroot, and an apple et voila! Perfect side is ready to serve. The salad is very juicy and has a pleasant naturally sweet taste so it can be used as a way to make your kids eat more raw vegetables.
(for 6-8 people as a small side salad)
- 2 small beetroots
- 2 carrots
- 1 root parsley or parsnip
- 1 apple
- fresh juice of 1/2 lemon
- Simply shred raw vegetables as well as an apple.
- Add a little lemon juice and mix well.
- Store in the fridge for up to 3 days.
